Camp Catfish

Jo says, “This is a very simple recipe. When we go camping, my nephews can’t wait until we catch a few catfish to fix right away!”

Ingredients:
            Whole, cleaned catfish (fillets work, also)
            1/2 onion, sliced
            Garlic cooking spray
            Pepper and Thyme, to taste

Directions:
Spray catfish with garlic cooking spray and sprinkle with pepper and thyme to taste. Place catfish on foil and spread onions over fish. Wrap fish in foil, then wrap again. Place foil pack on the grate above your campfire. Cook for approximately 15-20 minutes, turning once halfway through your cooking time. Fish is done when flakey
