Easy Dutch Oven Chicken Parmesan

Rhonda says, “I’ve shopped at Canfield’s since the store was still downtown, so probably about 20 years. This recipe is easily converted to regular oven cooking by replacing the Dutch oven with a 9x13” pan and covering with aluminum foil.”
Ingredients:
4-6 skinless chicken breasts
1 ½ - 2 jars of your favorite spaghetti sauce
1 cup mozzarella cheese
2 Tbsp olive oil
Salt and pepper to taste
Directions:
Drizzle olive oil in bottom of Dutch oven. Preheat Dutch oven over coals.
Brown chicken breasts until golden, approximately 5 minutes on each side. Pour spaghetti sauce over chicken breasts, using enough to cover.
Place lid on Dutch oven and use coals to bake at 350 degrees for 30-40 minutes.
Lift lid and sprinkle mozzarella and parmesan cheeses evenly chicken breasts. Replace lid and let sit for five minutes to melt cheese.
Salt and pepper to taste. Enjoy!
Note: Canned mushrooms, garlic powder, and other seasonings can be added as desired. Serve with garlic cheese bread that has been wrapped in foil and placed on top of the coals on the lid for the last 10 minutes of cooking.
For a 12” Dutch oven, approximately 15 coals on top of the lid and 10 underneath should bring the oven temperature to about 350 degrees. Maintain hot coals throughout the cooking process.
